With the onset of cold weather, more and more often catch yourself thinking that you want to prepare something light, warm and useful?
Try to cook this soup, it will not only warm, but also replenish the supply of vitamins in the body.
Cooking time: 30 minutes.
For 4 servings we need:
4 pods of sweet Bulgarian pepper;
3 cloves of garlic;
1 average bulb;
1 zucchini tsukini;
1.5 l of chicken broth;
2 tbsp. tablespoons of vegetable oil;
50 g of cinzes; zest from half of the lemon.
Cooking recipe:
1. Peel the onion with garlic and finely chop. We dry the well -washed pods of the Bulgarian pepper, cut each in half, remove the seeds with a stalk, cut the pulp by strips. My zucchini, dry and cut it with small slices.
2. We heat in a pan with thick walls vegetable oil, put pre -chopped garlic with onions and fry for 3 minutes. Add zucchini, sweet pepper and fry, constantly stirring for another 5 minutes.
3. Pour chicken broth into a pan with vegetables, bring to a boil and cook over low heat for 10 minutes. We rub lemon zest on a coarse grater, add to our broth with vegetables. Pepper and salt to taste. Cook on low heat for another 5 minutes.
4. My cilantro greens, dry with a paper towel and finely chop with a knife. Pour the finished soup according to portioned plates, sprinkle with greens and serve on the table. All. Vitamin soup is ready. Bon appetit!
