Sauerkraut soup (Zuppa di Crauti)
Ingredients:
* 22 tbsp. (100 g) sour cream

In a pot with a thick bottom, fry the onion and bacon in half of the butter, until the onion is lightly browned. Add broth and sauerkraut to the pan, cook all 30 minutes. Clean the potato, grate it on the middle grater in the soup. Bring soup to a boil. Cut the bread into cubes and fry them in the remaining butter. Put sour cream in hot (but not boiling) soup, season with salt and pepper to taste. Sprinkle with crackers and serve.
