Asparagus – one of the favorite dishes of Italians. It can be three types: green – it is mainly grown in Piedmont and Emilia -Romania; Red – from the campaign, also called the asparagus of Napletano (Asparago napoletano); And finally, white-it is not grown almost anywhere except Veneto, more precisely, in the province of Bassano del Gappo, along the banks of the Brent River. Each year in Bassano, asparagus is honored, and restaurateurs represent their new works based on it. Then they vote and choose the winner. To obtain a white asparagus, it is necessary to exclude the process of photosynthesis, due to which the plant turns green. For this, a special way of growing is used: as soon as the sprouts of asparagus are shown from the ground, they are covered with dark plastic, protecting from light. Usually only the first crop of white asparagus is grown, and then move on to growing green – it is not so fragrant, but also has a characteristic taste of asparagus.
