Soup with cucumbers and Bulgarian pepper originates from the word SOUPE – which means a liquid dish, which in turn is very common in different countries. The main feature of the soup with cucumbers and eggplant is that it includes about 55-60 percent of the liquid.
Necessary ingredients:
– 250 g of cucumbers (fresh);
– 2 pepper pieces (preferably Bulgarian);
– 4 tablespoons of oil (plant);
– 4 tablespoons of sauce (soy);
– 1 liter of broth (vegetable);
– 50 grams of juice (lime);
– 3 tablespoons of oil (sesame);
– 1 teaspoon of ground pepper.
Let’s proceed to the very stage of preparing the dish “Soup with cucumbers and Bulgarian pepper”:
From the very beginning it is necessary to start fresh cucumbers. Cucumbers must be cleaned from the peel. Then they must be cut so that small squares-quadures would turn out.
Bulgarian pepper, as well as fresh cucumbers must be cut.
For more, take a shallow pan, pour sesame oil into it, warm up, add sweet pepper chopped at the first stage and fry it for four minutes. After that, you need to add chopped fresh cucumbers and also fry a little.
When cucumbers and pepper are ready, it is necessary to add the rest of the ingredients – vegetable broth, sesame oil, lime juice and soy sauce. Sprinkle all this to red pepper.
At the last stage of cooking, soup with cucumbers and bell pepper must be brought to a boil, salt, then cover the pan with a lid and cook this dish for three minutes.
