There is not a single food on Earth, a drink that has such an ancient and glorious history, a mysterious halo of divine creature than grape wine. Isn’t it a miracle: the usual, seemingly juice of fragrant, delicious berries in the process of life of “magical” microorganisms (yeast) that absorb sugar “land juice” turns into a “sparkling drink of gods and heroes”. Blessed by natural ethyl alcohol, formed by a natural way, grape juice – a storehouse of chemical elements necessary for normal metabolism in the human body – has gone from ancient times in our life today, has entered our life and culture.

The emergence of winemaking, its distribution and development is devoted to many stories, legends, legends. Grape wine enriched the folklore of many peoples, took an honorable place in festivities and rites, poets and musicians devoted (and dedicated!) the guilt of the work, imbued with sincere love and respect for this drink.

In our region, the beginning of the development of winemaking dates back to the 3rd millennium BC. e. The term is very decent, is it so? Residents of Bessarabia are owe to the development of viticulture and winemaking by Roman legionnaires who brought knowledge and experience of cultivating vine to our lands and create wines.

Since 1812., After delivering Bessarabia from the Turkish yoke and joining the Russian Empire, the deserted southern regions of our region were quickly populated by immigrants – Bulgarians, Greeks, Armenians, Germans, Czechs and others. Over 50 years, the population of Bessarabia increased 4 times! Representatives of various peoples brought with them new grape varieties, their technology and culture of winemaking. The quality and volumes of the wine produced have increased significantly, and the market favored this: exports opened up for export and Russia. Since 1861. Bessarabia took first place in the area of ​​vineyards among other provinces, and wine was the main exported product. Bessarabian wines won medals at exhibitions in Kherson, St. Petersburg and Moscow, gained fame in Europe. The French, finding the similarity of their wines with Bessarabian, did not fail to use Sim. They began to buy grapes from the peasants for pennies right on the bushes, they themselves were removed and processed, and wine material was taken to France. Having withstand the wine in their cellars, they sold it in exorbitant prices, giving it out for the famous brands of French wines.

Soon, the vineyards of Europe struck Phillokser, and from 1868 to 1875. All grape plantations of France were destroyed. It was Bessarabia that saved from the inevitable collapse of this country, but soon the deadly pest reached our lands, which also led to the death of extensive plantations. However, if by this time the exit was found in France-vaccinated seedlings, then hybrids began to be imported into Bessarabia, which Fillloxer did not damage, but it was because of them that the edge of the subtlest wines turned into a manufacturer of simple, gross wines, without a bouquet, not harmonious in complication possessing unpleasant coloring, staining dishes and mouth not in vain, not characteristic of European varieties. Thin fame quickly replaced the good name of beautiful Purkar wines.

The situation has changed only after the return of the Bessarabia of the USSR. Thriteral work began to restore vineyards and winemaking culture.

Today, Moldovan golden, straw, purple, ruby ​​high -quality wines are not inferior to French, Italian, Spanish, Greek, and often surpass them. It is only a pity that the “folk” winemakers still produce mainly sparkle in every sense wine from hybrid varieties. But once it was the folk and semi -industrial winemaking, which has become on Earth the Moldavian way of life, a cult, if you want, and glorified it.

Now wine is used not only as an independent drink, but also prepared a variety of cocktails, used for cooking, especially meat dishes.
