Freshly frozen foods are frozen in a special way immediately after harvesting. This allows you to preserve in them all vital substances for many months and at the same time without the use of preservatives. Frozen in this way products do not lose either taste or color, remain crispy.
Freshly frozen products can be even more useful than fresh! And that’s why: vegetables and fruits from the market or supermarket have already made a long way to get on the counter, while a certain amount of time lay in warehouses. For this reason, the taste, as well as many vitamins and minerals are simply lost.
For example: 100 gr. recently collected peas contains 22.1 mg of vitamin C, the same amount of freshly frozen peas – 20.2 mg, and 100 g. recently collected peas, which lay in the refrigerator for 2 days – only 14.1 mg of vitamin C.
How to buy freshly frozen products correctly
Choose fresh -frozen products only after everything else has already been bought, otherwise they will begin to melt, they will become tough and fresh. If we are talking about fish or meat, then bacteria may form in them that will lead to the problems of the stomach and intestines. The road from the store to the house in winter should not exceed 30 minutes, in the summer – 10 minutes. Do not make products in the car in the car, it is best to leave them in the trunk.
How to choose good frozen products?
• Vegetables, rice dishes should be frozen separately. Only in this case, vitamins, minerals and taste will remain in them. Therefore, conduct such a test: shake the packaging, if the foods are sticking together in a large lump, then, most likely, the process of freezing was disturbed. Such vegetables will soon become tough and dry.
• There should never be “snow” inside the package. This will also talk about interrupting the freezing chain. In transparent packaging, such white crystals are visible very well. In opaque packaging, the marriage can be recognized using the next trick: remember a little bag, if it crunches, it is better not to buy it.
• When buying seafood (crabs, fish fillet, shrimp, mollusks), pay attention to the fact that the “glazed” is indicated on the package. This will mean that the product before shock frost was jumped with ice water. The thin layer of ice prevents oxygen and, thus, fish and other gifts of the sea do not deteriorate so quickly.
• Hands off the seafood and fish in transparent packaging! They have been in the light for too long, which makes the oils contained in them.
• Pay attention to burns burns! Poultry, meat and cakes are especially prone to them. These burns indicate gray spots along the edges of the product. As a rule, such products are hard and tasteless.
