Primaver paste or, as it is differently called “spring” is a rather versatile dish that can be prepared from completely different vegetables, depending on the season. Vegetable paste is prepared not only in spring, but in any other, so we use seasonal vegetables. In addition to young tsukini and green asparagus, carrots, tomatoes, punctures and other vegetables that you like the most like, the main thing is that they combine with each other are added to this dish.

The necessary products for the preparation of the primaver pasta:

Fettuchini – 500 grams

Broccoli – 1 small head

Tsukini – 1 pc.

Green peas – 100 grams

Green asparagus – 4 pcs.

Tomatoes – 3 pcs.

Garlic – 3 cloves

Butter – 4 tablespoons

Basil – 10 leaves

Vegetable or chicken broth – a quarter glass

Fat cream – half a glass

Salt

Primaver pasta recipe

We take the pan and boil water in it, well salt it (about 1 liter of water will require 100 grams of posts).

Fill a deep bowl with water, better cold.

Boil broccoli in boiling water for 1 minute, then add the asparagus and cook for about a minute, now we put peas and cook 30 seconds.

We transfer the boiled vegetables into cold water, we wait until the vegetables are cooled and sent to a colander. Water in which vegetables can not be poured can be poured, it will be possible to cook the pasta itself in it.

We take a large stewpan and warm up the oil in it, after which we put the tsukini and garlic in it, fry no more than 1 minute. Add peeled and crushed tomatoes and cook another pan, mixing all the time.

Add the broth and bring it to a boil. We spread the boiled vegetables and pour the cream, mix everything. Reduce the fire to such a face that the liquid boils only a little.

Add parmesan, mix, if the mixture is thick, then add more liquids, water, cream or broth.

Now boil the paste according to the instructions indicated on the package.

As soon as the pasta is ready, mix it with our sauce, add basil, spices and salt, if necessary, and serve to the table.
